And welcome. Hi, trust me I am not a food blogger. There are just certain things that I like to make note of since I have been on this food adventure trying to find things that I can eat. I often experiment I had been in Des Moines with my son at a Brazilian grill. There were a couple of interesting dishes that I really wanted to try doing on my own. First was a nice collard greens salad, dressed in a vinaigrette with some bacon.
The buffet had a lot of pickled items which I always think are good for you. They also had some small gluten-free rolls that were very much like popovers. I thought there must be an easy way to do these.
I had some leftover pancake batter in the refrigerator that I needed to use and I didn’t want pancakes. I took it out and added a couple of eggs and a little more of the pancake flour. Using a muffin tin I added a dot of butter to the bottom of each cup. Then I proceeded to spoon the batter into the tin. About 20 minutes later I had beautiful gluten-free pop over style muffins.
